Eleven years ago, Josh Cooke and Jordan Ross built a little listening room above Corner Perk in Old Town Bluffton.

Over the years, the Roasting Room changed, evolved, and was reimagined more than a few times. We knew we had something very special, and we saw nearly 1,000 phenomenal musical acts come through the room. Along the way, we learned what worked, what didn't, what artists needed from us, and what made a night of live music truly memorable.

Then, in the summer of '26, we went for a big reimagining. We're calling it Roasting Room 11.1.

Josh reimagined the Roasting Room from top to bottom. Not to make it bigger, but to make the experience better. Better for the artists on stage. Better for the music lovers in the room. Better sound, better lighting, more comfortable seating, better service, and a drink program worthy of the music.

Today, the Roasting Room is an intimate listening room built around one thing: original live music, close enough to feel.

There are no TVs competing for your attention or loud blenders distracting from the stage. Instead, settle in at your table with a great cocktail, a carefully chosen glass of wine, or something from our bourbon collection, and listen. We're even offering charcuterie, tapas, lattes, ice cream, and desserts now.

Every seat is close. You're never more than 30 feet from the stage. You can hear the texture of a voice, every instrument, and the stories behind the songs.

The last time demand ran this hot, he played two nights in a row, February 19 and 20, 2016. That August he came back with Another Day and did an early set and a late set the same evening. December 2018 he rolled through on fall tour. October 17 is one night. Get on the list.

Loop pedal, no tracks, seventy-five people in the dark. The bar is pouring while the house fills. Then he stacks a whole band live.

The new room

We've redone everything.

We want to explain what the new Roasting Room actually looks like, because there really isn't a bad seat in the house anymore.

If you remember the old room, the center section was mostly bench seating, almost like church pews. On the right side, we had another large section of benches facing in toward the stage, with a long bar across the back.

That's all changed.

Front and center, directly facing the stage, we now have six 4-top tables with comfortable, low padded seating.

Directly behind those are 23 individual stools at three bar rails, giving you a great elevated sightline straight toward the stage. We actually chopped down and moved the old bar to make room for this new setup.

On the right side of the room, we kept three of our original 4-seat benches, but completely reworked the layout. Each bench now has two tables in front of it, creating six really great 2-top sections.

And behind those, along the wall, we added three 4-seat booth sections.

Almost every seat in the room is now low, comfortable, padded seating with a table in front of you. The only exception is the bar-rail seating, and some of you may decide that's your favorite spot.

And that's the fun part.

Everyone is going to have a different opinion about the best seat in the house.

The question is: Can you get your tickets, and your arrival time, quick enough to claim yours?

There are two great ways to improve your chances:

1. Choose the earliest check-in time.

When you buy your tickets, select the 7:00 PM arrival time and be there when the doors open. And if you absolutely have to land your favorite spot, you might want to be there a little early.

When you come in, one of our servers will get you seated and start a tab for the evening. So getting there early isn't going to mean sitting around waiting for the show to start. It's part of the night.

Along with our new cocktail program, we'll also be serving some light food and treats. For now, think charcuterie, hummus plates, coffees, teas, ice cream, gelato, desserts, and more. We'll be adding things like flatbreads and continuing to beef up the food menu as we go. (No pun intended.)

So come early, grab the seat you want, order a drink and something to snack on, and settle in. You'll have plenty of time to chill, enjoy some good food and drinks, and let the room fill up before the music starts.

Once an Outlaw is a who's who of A-list musicians from the southern rock genre. Since its inception the band has included members of the Outlaws, Marshall Tucker Band, Foghat, the Allman Brothers, and the Dickey Betts Band, to name a few.

The band is constantly evolving as members come and go depending on tour commitments, so every show is different, with changing set lists. The current lineup is fronted by legendary guitarist and vocalist Chris Hicks of the Marshall Tucker Band and the Outlaws. Chris has been on the road with Marshall Tucker for the past 29 years. We've redone everything.

We want to explain what the new Roasting Room actually looks like, because there really isn't a bad seat in the house anymore.

If you remember the old room, the center section was mostly bench seating, almost like church pews. On the right side, we had another large section of benches facing in toward the stage, with a long bar across the back.

That's all changed.

Front and center, directly facing the stage, we now have six 4-top tables with comfortable, low padded seating.

Directly behind those are 23 individual stools at three bar rails, giving you a great elevated sightline straight toward the stage. We actually chopped down and moved the old bar to make room for this new setup.

On the right side of the room, we kept three of our original 4-seat benches, but completely reworked the layout. Each bench now has two tables in front of it, creating six really great 2-top sections.

And behind those, along the wall, we added three 4-seat booth sections.

Almost every seat in the room is now low, comfortable, padded seating with a table in front of you. The only exception is the bar-rail seating, and some of you may decide that's your favorite spot.

And that's the fun part.

Everyone is going to have a different opinion about the best seat in the house.

The question is: Can you get your tickets, and your arrival time, quick enough to claim yours?

There are two great ways to improve your chances:

1. Choose the earliest check-in time.

When you buy your tickets, select the 7:00 PM arrival time and be there when the doors open. And if you absolutely have to land your favorite spot, you might want to be there a little early.

When you come in, one of our servers will get you seated and start a tab for the evening. So getting there early isn't going to mean sitting around waiting for the show to start. It's part of the night.

Along with our new cocktail program, we'll also be serving some light food and treats. For now, think charcuterie, hummus plates, coffees, teas, ice cream, gelato, desserts, and more. We'll be adding things like flatbreads and continuing to beef up the food menu as we go. (No pun intended.)

Seventy-five people who came to hear you. Wood, a real PA, bourbon at the bar. The set starts at 8. If that is the right size for the night, ask for a date here.

Artists and managers: this form is the only way in. We do not look at submissions sent by email, DM, or anywhere else. Include a Spotify artist page and a live YouTube if you have them. That is how they land on the night page. A hold is not a night on the calendar. If it is a fit, the house writes back with dates and terms.
